What to do with that turkey body? Make double stock, of course! You can use your leftover turkey stock, boxed chicken broth or bouillon for a rich and fortified broth to make this flavorful soup. No stock, no problem. Plain water will give you a delicious single stock worthy of your tastebuds. Just simmer the body in your liquid for 2-3 hours until the bones fall apart. Strain to use. Be sure to help yourself to a cup first!

We make a version of this soup once every other week or so when the weather gets crisp. I add any veg lingering in my fridge as it’s a great catch all. In this version I used some leeks on their last legs along with the outer leaves of a savoy cabbage I had. You can use kale, cabbage, bok choy, squash, potatoes… really anything goes.

The key to a rich soup is making a roux before adding the stock so your soup has body. (A trick @stingchef taught me).

Double stock Andouille & Vegetable Soup

1.5-2 quarts double stock
Olive oil
1 pack andouille sausage
2 medium leeks, well washed
1 small onion
2 carrots
3-4 small celery stalks
Several cups of leafy greens
2 tbls Butter or leftover turkey fat
2 tbls flour
Chopped leftover thanksgiving turkey
Salt to taste
